An unpasteurised, living miso made in the Japanese style and aged at least a year in wooden vats, the slow way. Five seaweeds and three mushrooms go into it, which gives it a marine depth ordinary paste does not have — a staple in kitchens organised around fermented food.
What's in it
- Organic Japanese-style miso, fermented in wooden vats for a minimum of one year
- Five seaweeds: nori, dulse, kombu, ulva and fucales
- Three organic mushrooms: shiitake, reishi and maitake
- Live enzymes and lactobacillus, produced during fermentation
Good to know
- 500 g in a dark glass jar, which shields the contents from light
- The jar is deliberately not sealed airtight — fermentation gas needs somewhere to go, which is safer than a jar cracking under pressure
- Warm transit can wake the live cultures and push a little liquid to the rim, so the jar may arrive slightly sticky. Quality is unaffected.
