Country Creek organic broccoli seeds are meant for sprouting on the kitchen counter. Broccoli microgreens are crunchy and earthy, far milder than a broccoli stalk, and they land well on pizza, soup, curry, omelettes, stir-fries and pasta.

How to sprout them
Start in the evening. Soak two tablespoons of seed in one cup of water with two tablespoons of apple cider vinegar for ten minutes, then drain and rinse with clean water. Measure three tablespoons of seed into a quart jar, fit a sprouting lid or screen, rinse twice, half-fill the jar with water and leave it in the fridge overnight for 8 to 10 hours. In the morning pour the water off, refill to rinse, then shake out as much water as you can, turn the jar so the seed coats the sides and rest it at an angle in a small bowl to drain. Rinse again late that evening, then once a day, keeping excess water off to avoid mould.
Good to know
- Rinse microgreens gently in cold water and spin them dry; they bruise easily, so handle them lightly
